Apple Berry Turnovers With Vanila Mascarpone Sauce - cooking recipe

Ingredients
    1 None large green apple, cored, peeled and sliced
    1 1/3 tbsp sugar
    4 oz frozen blueberries, thawed
    2 sheets puff pastry
    1/2 cup mascarpone cheese
    1 tsp vanilla extract
    None None powdered sugar, for dusting
Preparation
    For the filling, combine apple, 1 tbsp sugar and 1 tbsp water in a medium saucepan and cook for 3-4 mins, until just softened. Add berries and set aside to cool.
    Preheat oven to 400\u00b0F. Lightly grease and line a baking sheet with parchment paper. Using a 5 inch round pastry cutter, cut 8 circles from pastry sheets and spoon an even amount of filling into the center of each. Brush edges with water and fold pastry over filling to form semicircles. Press edges firmly together to seal then transfer to baking sheet and brush with a little mascarpone. Sprinkle with remaining sugar. Bake for 15-20 mins, until puffed and golden.
    Meanwhile, for the sauce, beat vanilla extract with remaining mascarpone. Serve warm turnovers with sauce and a dusting of powdered sugar.
