Black Forest Cheesecake Bars - cooking recipe

Ingredients
    1 (15 oz) can pitted black cherries in syrup, drained, syrup reserved
    1 (3 oz) box cherry jello
    7 oz dark chocolate, melted
    4 oz cream cheese, softened
    4 oz mascarpone cheese
    1/2 cup granulated sugar
    2/3 cup heavy cream
    1 None large egg, separated
Preparation
    Preheat oven to 325\u00b0F. Grease a 7x12 inch rimmed baking pan and line base with parchment paper, extending paper 2 inches over long sides. Spread chocolate over base of pan and chill until set.
    Meanwhile, to make the cherry topping, combine jello and 2/3 cup boiling water in a small bowl. Stir until jelly is dissolved. Stir in 2/3 cup reserved cherry syrup and let cool. Chill jello until thickened slightly.
    Beat cream cheese, mascarpone, sugar, heavy cream and egg yolk until smooth. Stir in cherries. Whip egg whites to soft peaks then fold in. Pour over chocolate base and bake for 35 mins. Let cool in oven with the door ajar.
    Pour cherry topping over cheesecake. Chill overnight.
