Mulled Cider - cooking recipe

Ingredients
    30 g root ginger, peeled and thinly sliced
    1 litre dry cider
    4 None star anise
    3-4 tbsp brown rock sugar (Demerara could be substituted)
Preparation
    Place the cider, star anise and ginger in a saucepan and slowly bring to a boil. Once it boils, immediately remove from the heat and cool for 10 mins. Divide among four glasses, stir in the brown sugar until dissolved, and serve.
