Warm Brown Rice Salad With Roasted Vegetables - cooking recipe

Ingredients
    4 None large carrots, peeled, halved and quartered
    1 None red onion, cut into thin wedges
    1/4 cup olive oil
    2 tsp honey
    1/2 tsp cayenne
    7 oz brown rice
    1/2 head broccoli, cut into florets
    1 tbsp balsamic vinegar
    3.5 oz feta cheese, crumbled
    1/2 bunch fresh mint leaves, to serve
Preparation
    Preheat oven to 400\u00b0F.
    In a baking dish, combine carrots and onion. Drizzle with 2 tbsp oil and honey. Sprinkle with cayenne and season. Roast for 20-25 mins, until vegetables are tender and lightly caramelized.
    Meanwhile, cook rice according to package instructions, adding broccoli for the final 5 mins of cooking time. Drain.
    Transfer rice mixture to a large bowl along with roast vegetables. Toss with vinegar and remaining oil. Sprinkle with feta and mint leaves to serve.
