Roast Game Hens With Pancetta And Rosemary - cooking recipe

Ingredients
    5 tbsp butter, softened
    1 clove garlic, chopped
    8 sprigs fresh rosemary, 4 chopped, 4 left whole
    4 None Cornish game hens (1 to 1 1/4 lbs each)
    12 slices pancetta
Preparation
    Preheat the oven to 375\u00b0F. Mix the butter, garlic and chopped rosemary in a small bowl.
    Gently create a pocket between the skin and the flesh of each hen. Using your fingers, fill with the rosemary butter. Wrap 2 slices pancetta around each. Top with a sprig of rosemary and cover with another slice of pancetta. Tie the legs together with kitchen string and season with salt and black pepper. Place in a roasting pan.
    Roast for 35-40 mins until cooked through. Let stand 10 mins before serving.
