Pork Tenderloin With Tomato Mushroom Ragout - cooking recipe

1 tbsp oil
1 1/3 lbs pork tenderloin, cut into strips
9 oz chanterelle mushrooms
1 lb small tomatoes, chopped
4 None shallots, peeled and cut into rings
3/4 cup cream
1/2 cup vegetable stock
1 oz chives, chopped
Preparation

Heat the oil in a non-stick frying pan and cook the pork, turning, until cooked through. Season to taste, remove from the pan and drain on paper towels.
Add the mushrooms to the pan and saute for 5 mins. Add the tomatoes and shallots and saute for 2 mins. Season to taste, add the cream and stock and simmer for 3 mins. Add the pork and chives and warm through.
