Nasi Goreng - cooking recipe
Ingredients

2 tbsp peanut oil
7 oz chicken thighs, finely chopped
10 None raw shrimp, peeled, deveined, halved
4 None green onions, sliced into 1 inch batons
2 cloves garlic, chopped
1 None red chili, chopped
1 1/2 lb cooked long-grain rice
1/2 tbsp soy sauce
1 None lime, juiced
1 tbsp tomato sauce
2 tsp fish sauce
1/2 cup fresh cilantro leaves, plus extra to serve
None None 4 fried eggs, lime wedges, tomato wedges and cucumber batons, to serve
Preparation

In a large wok or frying pan, heat 1 tbsp oil over high heat. Stir-fry chicken and shrimp for 2-3 mins, until cooked through. Transfer to a large bowl.
Add remaining oil to pan and place over medium heat. Stir-fry green onions, garlic and chili for 1 min, until fragrant. Add rice, stirring to break up any lumps. Add soy sauce, lime juice, tomato sauce, fish sauce and cilantro. Stir-fry for 2-3 mins, until heated through. Serve with fried eggs, lime wedges, tomatoes and cucumber. Top with extra cilantro.
