Rosmary Dijon Beef Kebabs With Vegetables - cooking recipe

1/4 cup vegetable oil
1/4 cup rice wine vinegar
1 tbsp fresh rosemary leaves, minced, plus 6 sprigs
1 tbsp fresh thyme leaves, minced
1 tbsp Dijon mustard
1 tsp sugar
1 tsp minced garlic
1 None lemon, zested and juiced
2 None large zucchini or yellow squash, halved lengthwise and sliced diagonally
2 None bell peppers, seeded and chopped
1 None small red onion, cut into wedges
1 1/2 lb boneless beef sirloin steak, cut into 1 1/2 inch cubes
Preparation

Whisk together oil, vinegar, minced herbs, mustard, sugar, garlic, 1 tbsp lemon juice and 1 tsp lemon zest. Season. Toss vegetables and meat with 1/2 of lemon-herb mixture. Cover and marinate in refrigerator for at least 30 mins.
Meanwhile, soak rosemary sprigs in ice water for at least 30 mins. Remove from water and pat dry. Remove vegetables and meat from marinade. Discard used marinade.
Preheat grill. Alternately thread meat and vegetables onto rosemary sprigs. Grill for 8-10 mins, or until thermometer inserted into meat reads 145\u00b0F for medium rare, brushing with remaining lemon-herb mixture occasionally. Arrange skewers on a serving platter.
