Stuffed Mushrooms - cooking recipe

Ingredients
    6 large mushrooms
    3 tbsp extra virgin olive oil
    3 cloves garlic, chopped finely
    2 cups fresh breadcrumbs
    1/2 cup chopped fresh flat-leaf parsley
    1 1/2 tsp lemon peel
    1/4 cup finely grated Parmesan cheese
    None None Salt and freshly ground black pepper
Preparation
    Preheat the oven to 350\u00b0F. Remove the stems from the mushrooms; coarsely chop stems.
    Heat 1/2 the oil in a large skillet on high heat. Add the mushroom stems. Cook, stirring, for 1 min or until softened. Add the garlic, cook, stirring for 1 min or until fragrant. Add remaining oil and breadcrumbs; cook, stirring, for 2 mins. Remove from the heat. Stir in the parsley, lemon peel and Parmesan cheese; season with salt and freshly ground black pepper.
    Fill the mushrooms with breadcrumb mixture. Place the mushrooms in a baking dish.
    Roast for about 20 mins or until tops are browned and mushrooms are just tender.
