Apple And Custard Cake - cooking recipe

Ingredients
    None None FOR THE CUSTARD
    2 tbsp custard powder
    1/4 cup granulated sugar
    1 cup milk
    1 tbsp butter
    2 tsp vanilla extract
    None None FOR THE CAKE
    14 tbsp (1 3/4 sticks) butter, softened, plus 1 tbsp, melted
    2/3 cup firmly packed brown sugar
    2 None eggs
    2 1/3 cups self-rising flour
    1/2 cup buttermilk
    2 None apples, peeled and thinly sliced
    2 tsp granulated sugar
    1/2 tsp ground cinnamon
Preparation
    For the custard, combine the custard powder and sugar in a small saucepan. Gradually stir in the milk. Stir on medium heat until the mixture boils and thickens. Remove from the heat. Stir in the butter and vanilla extract. Press plastic wrap over the surface; cool
    Preheat the oven to 350\u00b0F. Grease a deep 9-inch round cake pan and line with parchment paper.
    For the cake, beat the butter and brown sugar in a large bowl with an electric mixer until light and fluffy. Add the eggs, one at a time, beating until combined between each addition. Stir in the sifted flour and buttermilk, in 2 batches.
    Whisk the cooled custard until smooth. Spread half of the cake batter into the prepared pan. Top with custard. Spread the remaining cake batter over custard until completely covered. Overlap the apple slices on top. Brush with the 1 tbsp melted butter. Sprinkle with combined granulated sugar and cinnamon.
    Bake for about 1 hour or until firm. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
