Chicken, Pesto And Provolone Panini - cooking recipe

1 large boneless skinless chicken breast, cut crosswise into 4 thin slices
1 tbsp oil
1 None lemon, peel grated and lemon juiced
1 clove garlic, crushed
1/4 cup basil pesto
8 slices ciabatta bread
2 None tomatoes, sliced
4 slices provolone cheese
Preparation

Place the chicken slices in a shallow bowl. Combine the oil, lemon peel and juice, and garlic and pour over the chicken slices. Set aside to marinate for 10 mins.
Heat a large skillet on high heat. Cook the chicken for 2 mins each side, until golden.
Spread the pesto onto 4 ciabatta slices. Top each with sliced tomato, a slice of provolone, a piece of chicken and remaining bread. Cook in a panini press for 2-3 mins, until golden. Serve hot.
