Pork Cutlets With Lentils And Pancetta - cooking recipe

4 None pork cutlets
3.5 oz pancetta
2 tsp olive oil
2 cloves garlic, minced
1 cup chicken stock
1 (13.5 oz) can brown lentils, rinsed, drained
4 oz frozen green peas
1/4 cup fresh mint leaves
Preparation

Preheat an oiled grill plate (or broiler or grill). Cook cutlets until browned on both sides and cooked to your liking.
Cook pancetta on same grill plate until crisp. Drain on paper towels then tear into bite-sized pieces.
Meanwhile, heat oil in a large, heavy-bottomed frying pan. Cook garlic, stirring, until fragrant. Add stock, lentils and peas. Cook, stirring, until peas are tender. Add mint and pancetta.
Serve cutlets with lentil and pancetta mixture.
