Strawberry Tuiles With Fruit Sorbet - cooking recipe

    None None Tuiles
    2 None medium egg whites
    1/2 cup sugar
    2 1/2 tbsp all-purpose flour, sifted
    2 tbsp butter, melted
    1.75 oz strawberries, hulled, roughly chopped and drained on kitchen paper
    None None Fruit sorbet, to serve
    None None Mint leaves, to garnish
Preparation
    Preheat the oven to 400\u00b0F. Cut two 8-inch squares of parchment paper and place each on a baking sheet. Draw a 5 inch circle on each.
    Beat the egg whites in a small bowl until frothy. Add the sugar. Stir in the flour, then the butter, stirring until well mixed.
    Divide the mixture between the two circles, spreading evenly to the edges. Sprinkle each with the chopped strawberries. Bake for 5-8 mins until the mixture is golden brown.
    Remove from the oven. As quickly as possible, lift the tuiles off the paper and drape them over upturned tumblers to shape into baskets. Leave until firm.
    If the mixture sets hard before you have had time to mold the baskets, return to the oven for a couple of minutes until softened; repeat the process.
    When ready to serve, fill the tuiles with scoops of fruit sorbet and garnish with fresh mint.
