Roast Salmon With Pine Nut Crumb - cooking recipe

Ingredients
    2 cups sourdough breadcrumbs
    3 tbsp butter, chopped
    1/2 cup plus 1 tbsp pine nuts
    2 cloves garlic, coarsely chopped
    1 tbsp lemon thyme leaves
    2 None lemons, cut into wedges
    1 None red onion, thickly sliced
    6 None salmon fillets
    2 tbsp olive oil
    None None FOR THE SALAD
    1 cup frozen fava beans
    1 cup frozen peas
    1 cup pea shoots
    2 tbsp olive oil
    1 tbsp lemon juice
Preparation
    Preheat the oven to 400\u00b0F. Line baking pan with parchment paper.
    Combine crumbs, butter, 1/2 cup pine nuts, garlic and thyme in a food processor. Pulse until it begins to bind together.
    Arrange lemon wedges and onion slices on prepared pan. Place salmon on top. Press crumb mixture on salmon. Drizzle with olive oil.
    Bake 12-15 mins, until fish is just cooked through.
    For the salad, blanch fava beans and peas in boiling salted water 1 min. Drain and refresh in iced water. Drain well. Transfer to a bowl with pea shoots. Toss with combined oil and lemon juice. Season to taste. Serve salmon with baked onions, lemon wedges and salad. Sprinkle with additional pine nuts.
