Spicy Lentil Soup - cooking recipe

Ingredients
    2 tbsp butter
    2 None medium onions, finely chopped
    2-3 None cloves garlic, chopped
    3 tsp hot curry powder
    3 1/2 cup vegetable stock
    1/2 lb green lentils
    3 None medium tomatoes, diced
    1 None mango, finely chopped
    2-3 tsp lemon juice
    None None mint leaves, to serve
Preparation
    Heat the butter in a large pan and cook the onions and garlic until softened. Add the curry powder and saute briefly. Pour in the stock and lentils, bring to the boil, cover and cook for about 45 mins. About 5 mins before the end of the cooking time, stir in the tomatoes and mango. Season to taste with salt, pepper and lemon juice. Garnish with mint leaves.
