Meatballs With Mashed Potatoes And Carrots - cooking recipe

Ingredients
    600 g carrots, peeled and cut diagonally into slices
    3 None onions, peeled and 1 finely diced, 2 sliced
    600 g minced beef
    1 tsp medium-hot mustard
    4 tbsp breadcrumbs
    4 tbsp + 200 ml milk
    1 None egg
    800 g floury potatoes, peeled and quartered
    2 tbsp oil
    1 heaped tbsp plain flour
    5 tbsp butter
    1 bunch parsley, chopped (some set aside for garnish)
    1 pinch grated nutmeg
Preparation
    For the meatballs, mix the beef, diced onion, mustard, breadcrumbs, 4 tbsp of milk and the egg. Season to taste and knead well. Form into 20 balls.
    Boil the potatoes in salted water for about 20 mins.
    Meanwhile, heat the oil in a frying pan and brown the meatballs for 5-7 mins, turning as necessary. Remove from the pan and keep warm. Dust the slices of onion lightly with flour and fry them in the hot oil until crisp. Remove them from the pan and keep warm.
    For the carrots, melt 3 tbsp of butter in a pan. Saute the carrots for 5-6 mins until just tender. Stir in the chopped parsley.
    Drain the potatoes well, then mash with 1 cup milk and 2 tbsp of butter. Stir in the nutmeg and season to taste. Transfer to plates with the meatballs and carrots and garnish with parsley.
