Vanilla And Lime Tropical Fruit Salad - cooking recipe

Ingredients
    3/4 cup grated palm sugar or brown sugar
    1 None vanilla bean
    1 piece (3/4 inch) fresh ginger, finely chopped
    3 None star anise
    1 tbsp finely grated lime rind
    1/3 cup lime juice
    1/2 cup coarsely chopped fresh Vietnamese mint
    2 None mangoes, coarsely chopped
    3 None star fruit, thinly sliced
    2 None oranges, segmented
    1 None pineapple, coarsely chopped
    1 None papaya, coarsely chopped
    4 None passionfruit, pulped
    12 None rambutans, halved
    12 None lychees, halved
Preparation
    Stir 3 cups water and sugar in medium saucepan on high heat until sugar dissolves; bring to a boil. Reduce heat to low; simmer without stirring for 5 mins.
    Split vanilla bean in half lengthwise; scrape seeds into pan. Add pod, ginger and star anise; simmer for 10 mins or until syrup thickens. Discard pod; cool syrup to room temperature. Stir in lime peel and juice and mint.
    Combine remaining ingredients in large bowl. Pour syrup over fruit; stir gently to combine. Cover. Refrigerate until fruit salad is cold.
