Lemon And Poppyseed Muffins - cooking recipe

Ingredients
    2 1/2 cups self-raising flour
    3/4 cup sugar
    3 tbsp poppy seeds
    1 None lemon, zested
    3/4 cup milk
    1/2 cup lemon juice
    7 tbsp butter, melted
    1 None large egg, lightly beaten
    None None powdered sugar, to dust
Preparation
    Preheat oven to 350\u00b0F. Line a 12-hole muffin pan with paper cases or spray lightly with oil. Sift flour into a large bowl. Stir in sugar, poppy seeds and zest. Make a well in center of dry ingredients.
    In a small bowl, blend together milk, juice, butter and egg. Mix into dry ingredients until just combined (about 16 strokes).
    Spoon mixture into the paper cases until two-thirds full. Bake for 15-20 mins, until cooked when tested. Transfer to a wire rack to cool. Dust with powdered sugar. Store in an airtight container.
