Breakfast Sausages With Mashed Winter Veggies - cooking recipe

Ingredients
    1 lb potatoes, peeled and roughly chopped
    1 2/3 lb celeriac, or another root vegetable, peeled and diced
    2 tbsp oil
    12 None breakfast sausages
    1 None red onion, peeled and sliced
    1 tbsp all-purpose flour
    1 cup vegetable stock
    2/3 cup 2% or whole milk
    3 1/2 tbsp butter
    1 pinch freshly grated nutmeg
    8 None spring onions, sliced
Preparation
    Cook the potatoes and celeriac in boiling salted water for 20 mins. Drain and keep warm.
    Meanwhile, heat the oil in a frying pan and sear the sausages over medium heat for 8 mins, turning. Remove from the pan and keep warm. Add the red onion and saute for 5 mins, until softened. Season then add the flour. Add the stock and bring to a boil, stirring. Return the sausages to the pan and keep warm.
    To finish, bring the milk and butter to a boil. Add to the potatoes and celeriac and mash. Season with salt and a pinch of nutmeg. Add the spring onions. Serve with the sausages and gravy.
