Grilled Beef And Bacon Brochettes - cooking recipe

Ingredients
    1 medium red pepper, cut into 1-inch pieces
    1 medium yellow pepper, cut into 1-inch pieces
    1 1/3 lbs beef sirloin steak, trimmed and cut into 1-inch pieces
    6 slices bacon, partially cooked and cut into 1 1/2-inch pieces
    2 small red onions, cut into wedges
    2 tbsp balsamic vinegar
    2 tbsp wholegrain mustard
    None None Flatbread, baby spinach leaves, lemon wedges, to serve
Preparation
    Thread pepper, beef, bacon and onion onto 12 skewers. Spray with no stick cooking spray. Combine vinegar and mustard in a small bowl. Brush evenly over skewers.
    Preheat a lightly oiled grill to medium heat. Grill skewers, turning, for 10-12 mins for medium or until beef is cooked to desired doneness. Transfer beef to a heatproof plate. Cover with foil; let stand for 5 mins.
    Meanwhile, spray both sides of flatbread with cooking spray. Grill for 1-2 mins each side or until browned.
    Place flatbread on plates. Top with spinach and skewers. Serve with lemon wedges.
