Brunch Meatloaf - cooking recipe

7 medium eggs
500 g sausage meat
1 tbsp mustard
4 tbsp breadcrumbs
400 g streaky bacon
250 g sliced Raclette cheese
250 g cucumber ribbons
None None green salad, to serve
Preparation

To hard boil the eggs, place 6 eggs in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from the heat. Let eggs sit in hot water for 12 minutes, drain then run under cold water. Peel.
Weave bacon in a lattice pattern on a sheet of parchment paper into a 14 x 18 inch rectangle. Combine sausage meat with mustard, remaining egg, breadcrumbs and 4 tbsp water then spread over bacon evenly. Arrange cheese and cucumber over top then lay eggs on bottom quarter along the long side. Roll up, using parchment paper as an aid. Bake for 1 1/2 hours. Remove from oven, cover in foil and allow to rest for 10 mins before serving.
