Cheesy Rissoles With Baba Ghanoush - cooking recipe

Ingredients
    1 lb ground beef
    1 None small Spanish onion, grated
    3 tsp Moroccan seasoning mix
    1 None egg, lightly beaten
    4 1 inch cubes Cheddar cheese
    1 tbsp vegetable or olive oil
    4 None Turkish pide rolls, split, toasted, to serve
    4 None green oak lettuce leaves
    1 None Persian cucumber, sliced on a bias
    3/4 cup baba ghanoush
    1 None medium carrot, coarsely grated
    None None oven baked French fries, to serve
Preparation
    Combine ground beef, onion, seasoning mix and egg in a medium bowl. Divide into 4 portions. Stuff each with 1 cube of cheese and shape into a patty. Cover with plastic wrap and chill for 15 mins.
    Heat oil in a large frying pan over medium heat. Reduce heat and add rissoles. Cook for 4-5 mins per side, or until cooked through.
    Place bread on serving plates. Stuff with lettuce, cucumber, rissoles, baba ghanoush and carrot. Serve immediately with French fries.
