Blinis With Bacon And Avocado - cooking recipe

Ingredients
    3/4 cup self-rising flour
    3/4 cup buttermilk
    1 None large egg
    4 strips bacon, finely chopped
    2 tbsp butter, melted
    2/3 cup sour cream
    1 None ripe avocado, peeled, flesh chopped
Preparation
    For the blini batter, sift the flour and a pinch of salt into a large bowl and make a well in the center. Whisk together the buttermilk and egg and add to the flour, whisking constantly, until smooth. Cover with cling wrap and chill for 30 mins.
    Meanwhile, heat a large frying pan over moderate heat. Cook the bacon, stirring, for 3-4 mins or until crisp. Drain on paper towels.
    Wipe pan clean and place over medium heat. Brush pan with melted butter. Drop 6 teaspoons of batter into pan one at a time and cook for 1-2 mins or until bubbles appear on the surfaces and bottoms are golden. Flip and cook for 1-2 mins, until golden. Transfer to a wire rack to cool then arrange on a serving platter. Top with sour cream, avocado, bacon and freshly ground black pepper.
