Giant Macadamia Nut, White Chocolate And Cranberry Cookies - cooking recipe

1 cup light brown sugar
1/2 cup granulated sugar
1 2/3 cups self-rising flour
1/2 cup all-purpose flour
3/4 cup macadamia nuts, roughly chopped, toasted
1 None large egg, plus 1 large egg yolk
15 tbsp unsalted butter, melted
5 oz white chocolate, roughly chopped
3.5 oz dried cranberries
Preparation

Preheat oven to 350\u00b0F Line 3 baking trays with parchment paper.
Combine sugar, flour and nuts. Lightly whisk together egg, egg yolk and butter until combined then stir into flour mixture until combined. Stir in chocolate and cranberries. Roll rounded tablespoons of mixture into balls. Place, 3 inches apart, on trays. Flatten to about 3 inches wide. Bake for 12 mins. Let cool on trays.
