Meatball Pizza Skewers - cooking recipe

Ingredients
    125 g mozzarella cheese, cut into small pieces
    2 stems basil, leaves picked and finely chopped
    2 stems oregano, leaves picked and finely chopped
    1 sprig rosemary, leaves picked and finely chopped
    1 stem thyme, leaves picked and finely chopped
    1 None onion, cut into small cubes
    500 g chicken mince
    2 tbsp breadcrumbs
    1 None medium egg
    8 tbsp olive oil
    330 g ready made bread dough
    600 g mixed salad leaves, rinsed and drained
    100 g cherry tomatoes, halved
    1 None red onion, peeled, cut into thin strips
    2 cloves garlic, peeled and finely sliced
    2 stalks parsley, leaves picked and finely chopped
    6 tbsp vinegar
    2 tsp medium-spicy mustard
    1/2 tsp sugar
    None pinch paprika
Preparation
    To make the meatblls, mix together the chicken, breadcrumbs, egg, mozzarella, basil, oregano, rosemary, thyme and onion until the mixture is smooth. Season with salt, pepper and paprika spice. Shape into 16 mini meatballs. Heat 2tbsp of the oil in a pan, add the meatballs and fry briefly, until evenly browned. Remove and set aside.
    Preheat the oven to 400\u00b0F. Line a baking tray with baking paper. Roll the dough mix into 8 equally sized sausage shapes. On each wooden skewer, alternately place two meatballs and one dough 'sausage' (see image). Bake in the oven for 10-15 mins.
    Place the lettuce leaves, tomatoes and red onion on a large serving platter. To make the vinaigrette, beat the garlic, parsley, vinegar, sugar, mustard and 6 tbsp of oil together in a bowl. Pour over the salad.
    When cooked through, remove skewers from the oven. Place on top of the salad platter.
