Quince Jelly - cooking recipe

Ingredients
    6 None quince, coarsely chopped (around 4 1/2 lbs)
    5 1/2 cups granulated sugar (approximately)
    1/2 cup lemon juice
Preparation
    Bring quince and 7 cups water to a boil. Reduce heat and simmer, covered, for about 1 hour, or until soft. Transfer to a colander lined with a fine cloth. Let liquid drip through cloth overnight. Do not squeeze. Discard pulp.
    Measure quince liquid. For every 1 cup of quince liquid, measure out 1 cup of sugar. Combine quince liquid and sugar in a large saucepan. Stir over high heat, without boiling, until sugar is dissolved. Stir in lemon juice and bring to a boil. Boil, without stirring, for 25 mins, or until jelly sets when tested on a cold plate.
