Pork Chops With Lentil, Carrot And Potato Purée - cooking recipe

Ingredients
    1 lb potatoes, peeled and finely diced
    1 lb carrots, peeled and finely diced
    1 - 28 oz can lentils
    2 tbsp canola oil
    4 None boneless pork chops
Preparation
    Cook potatoes in boiling salted water for 10 mins. Add carrots and cook for another 10 mins. Drain and puree with lentils.
    Meanwhile, heat oil in a large pan and sear pork chops for 8 mins. Deglaze pan with 4 tbsp water and cook for another 2 mins. Serve with vegetable puree.
