Kofta Couscous - cooking recipe

Ingredients
    1/2 cup couscous
    1 tsp butter
    3 None cooked lamb koftas or meatballs, broken into small pieces
    1 1/2 tbsp shelled pistachios, chopped
    None None Handful fresh mint leaves, chopped
    1 None green onion, sliced
    1 tsp finely chopped red chili pepper (optional)
    None None Tzatziki, to serve
Preparation
    Place couscous in bowl with butter and season with sea salt and black pepper. Add 2/3 boiling water. Cover with plastic wrap. Let stand for 3 mins, or until liquid has been absorbed.
    Fluff couscous with fork. Add kofta pieces, pistachios, mint, onion and chili pepper. Toss together. Serve hot or cold with tzatziki.
