Chicken Satay With Peanut Sauce - cooking recipe

Ingredients
    1/4 cup coconut milk
    1 tbsp soy sauce
    1 tsp honey
    2 cloves garlic, peeled and finely chopped
    2 tbsp fresh root ginger, peeled and grated
    1 lb chicken breast, cut into strips
    5 tbsp peanut butter
    2 tbsp sour cream
    8 sprigs fresh cilantro, 4 sprigs reserved for garnish, remainder chopped
    3 tbsp oil
Preparation
    In a bowl, mix together the coconut milk, soy sauce, honey, half the garlic, and 1 tsp ginger. Add the chicken and toss to coat. Chill and let marinate for 30 mins.
    In a pan, heat the peanut butter and remaining garlic and ginger until warm. Remove from the heat. Stir in the sour cream and chopped cilantro. Season with salt and black pepper. Spoon into 6 small glasses and garnish with cilantro.
    Drain the chicken strips from the marinade and thread on to wooden skewers. Heat the oil in a frying pan and saute the chicken in batches for 3-5 mins, until browned and cooked through. Serve with the peanut sauce.
