Soy Marinated Fish Skewers - cooking recipe

Ingredients
    1/4 cup lime juice, from 4 large limes
    3 pieces fresh ginger, cut into matchsticks
    2 tbsp light soy sauce
    2 tbsp hoisin sauce
    1 1/3 lbs firm white fish fillets, cut into 1-inch pieces
    2 None red peppers, seeded and cut into 1-inch pieces
    8 None green onions, white ends only, trimmed and cut 1 1/2-inch pieces
    2 None limes, halved
    2 cups cooked long-grain white rice
    None None Steamed bok choy, to serve
Preparation
    Mix lime juice, ginger and sauces in a large bowl. Pour 2/3 of the marinade into a small saucepan; set aside. Add fish to remaining marinade. Toss to coat. Cover with plastic wrap. Refrigerate for 20 mins to marinate.
    Thread fish, peppers and onions onto 8 skewers; spray with no stick cooking spray. Heat a grill pan on medium heat (Or preheat grill on medium heat.). Cook skewers, turning occasionally, for 10 mins or until cooked through.
    Meanwhile, spray lime halves with cooking spray. Cook limes, cut-side down, for 3 mins or until lightly charred.
    Place reserved marinade on medium heat. Cook for 2 mins or until sauce thickens slightly. Serve skewers with grilled limes, rice and bok choy. Drizzle with sauce.
