Bacon, Lentil And Vegetable Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None medium onion, finely chopped
    4 slices bacon, finely chopped
    2 stalks celery, trimmed, coarsely chopped
    2 None medium carrots, coarsely chopped
    2 cloves garlic, minced
    7 oz red lentils
    4 cups chicken stock
    1/4 cup fresh chives, finely chopped
Preparation
    Heat oil in large saucepan over high heat. Cook onion, bacon, celery, carrots and garlic until softened. Add lentils and stock. Bring to a boil, reduce heat and simmer, uncovered, for about 15 mins, or until vegetables and lentils are tender. Add chives and season.
