Mini Hot Dog Muffins - cooking recipe

Ingredients
    1 3/4 cups self-rising flour
    1 tsp baking powder
    5.5 oz Cheddar cheese, grated
    3 tbsp fresh flat-leaf parsley leaves, coarsely chopped
    2 None eggs, at room temperature
    3/4 cup milk
    1/2 cup butter, melted
    8 None cocktail wieners
    None None tomato sauce, to serve
Preparation
    Preheat oven to 400\u00b0F. Grease and line 8 mini loaf pans with parchment paper.
    Sift together flour, baking powder and a pinch of salt. Add 4.5 oz cheese and parsley. Whisk together eggs, milk and butter then mix into dry ingredients until just combined. Distribute 1/2 of batter between prepared pans. Add a cocktail wiener to each pan then top with remaining batter. Sprinkle with remaining Parmesan and bake for 20 mins, or until golden brown. Let cool in pans for 5 mins then transfer to a wire rack to cool slightly.
    Serve with tomato sauce.
