Souvlaki With Greek Salad - cooking recipe
Ingredients

1 None cucumber, 1/2 coarsely grated, 1/2 cut into small chunks
2 cloves garlic, peeled and minced
3/4 cup Greek-style yogurt
1/2 lb tomatoes, chopped
1/4 lb green and black olives, pitted
1/2 lb feta cheese, cubed
2 None onions, peeled, 1 diced, 1 cut into chunks
1 None red bell pepper, deseeded, 1/2 diced, 1/2 cut into chunks
2 tbsp white wine vinegar
3 tbsp olive oil
1 1/4 lb lean, boneless, pork leg, cut into chunks
1 None yellow bell pepper, deseeded and cut into chunks
1 None green bell pepper, deseeded and cut into chunks
Preparation

To make the tzatziki sauce, mix the grated cucumber, garlic and yogurt and season. Cover and chill in the fridge.
To make the salad, mix the remaining cucumber, tomatoes, olives, feta, diced onion and diced red bell pepper. Toss with the vinegar and 1 tbsp oil. Season to taste, cover and set aside.
For the souvlaki, thread the pork, remaining onion and bell peppers onto skewers. Season well.
Heat the remaining oil in a large frying pan and sear the skewers for 8-10 mins, turning frequently, until the pork is cooked through and lightly charred in places. Serve with the salad and tzatziki.
