Praline Affogato - cooking recipe

Ingredients
    1 2/3 cups milk
    1 None vanilla bean, split
    6 None large egg yolks
    1/2 cup sugar
    1 1/4 cups heavy cream
    5.25 oz pralines, crushed
    6 shots espresso, to serve
    None None Biscotti, to serve
Preparation
    Heat the milk and vanilla bean until almost boiling. Remove from heat and remove the vanilla bean.
    Beat the egg yolks with the sugar until thick, then add the milk in a thin stream, stirring constantly.
    Strain the mixture into a clean saucepan and stir over low heat until thickened. This will take 8-10 mins. When the mixture coats the back of a wooden spoon, remove and transfer to a clean bowl sitting in a larger bowl of iced water. Stir in the cream and leave to cool completely.
    Churn in an ice cream machine following the manufacturer's instructions, then fold in the pralines. Spoon into a metal container and freeze.
    Place large scoops of ice cream into serving bowls. Serve with biscotti and a shot of espresso on the side.
