Chicken And Tomato Wraps - cooking recipe

Ingredients
    2 tbsp olive oil
    1 lb boneless skinless chicken thighs, trimmed and sliced
    1 None red pepper, seeded and sliced
    1 None green pepper, seeded and sliced
    1 None onion, thinly sliced
    1 can (14 oz) diced tomatoes
    2 small red chii peppers, finely chopped
    2 tbsp cilantro leaves
    8 None flour tortillas
    None None Light sour cream, shredded lettuce and grated cheese, to serve
Preparation
    Heat oil in a large skillet on high heat. Brown chicken in 2 batches for 2-3 mins, until cooked through. Remove from pan.
    Saute peppers and onion in same pan for 1-2 mins. Stir in tomatoes and chili peppers. Season to taste. Simmer for 4-5 mins, until thickened.
    Return chicken to pan. Heat gently, stirring, for 1 min. Stir in cilantro.
    Meanwhile, warm tortillas according to package directions. Place spoonfuls of chicken mixture onto each tortilla. Top with sour cream. Sprinkle with lettuce and cheese. Roll up and serve.
