Broccoli Fritters With Radish Salad - cooking recipe

Ingredients
    1 tsp Dijon mustard
    2 tbsp apple cider vinegar
    3 tbsp olive oil
    3 tbsp capers
    6 tbsp radishes, diced
    1 None small onion, chopped
    1 1/4 lb broccoli, cut into small florets
    3/4 cup all-purpose flour
    2 None medium eggs, beaten
    1/2 cup ground almonds
    3-4 tbsp sunflower oil
Preparation
    To make the radish salad: Mix the mustard, vinegar and olive oil. Mix in the capers, radish and onion. Set aside.
    To make the fritters: Blanch the broccoli in boiling, salted water for 1-2 mins then drain and rise with cold water. Chop half of it roughly, then place all of the broccoli in a bowl and mix in the flour, eggs and ground almonds. Season with salt and pepper. Heat 3 tbsp of the sunflower oil in a non-stick frying pan. Form the broccoli mixture into 12 fritters. Fry them in batches for 6-8 mins, turning, and adding more oil if necessary. Serve the fritters on 4 plates with the radish salad.
