Calves Liver With Roasted Onions And Apples - cooking recipe

Ingredients
    3 tbsp oil, divided
    2 slices bacon
    2 None apples, peeled, cored and cut into rings
    1 None onion, peeled and cut into thin rings
    6 tbsp all-purpose flour, divided
    1 1/3 lb calves liver, sliced
    None None parsley to garnish
Preparation
    Heat 1 tbsp of oil in a frying pan and cook the bacon until crisp, remove and drain on paper towels reserving the bacon fat in the pan. Saute the apple rings in the hot bacon fat 2 mins each side. Remove and keep warm. Coat the onion rings with 2 tbsp of flour and fry them in the hot fat until crisp. Remove and drain on paper towels.
    Coat the liver in 4 tbsp of flour. Heat 2 tbsp of oil in a frying pan and saute the liver for about 6 mins, turning as necessary. Serve the liver, apple slices, onion rings and bacon garnished with parsley with mashed potatoes on the side.
