Tomato, Arugula And Pine Nut Salad - cooking recipe
Ingredients

1/4 cup extra virgin olive oil
2 tbsp lemon juice
1 clove garlic, crushed
3 cups arugula leaves
8 oz cherry tomatoes, halved
1/3 cup toasted pine nuts
1/3 cup shaved Parmesan cheese
1/4 cup shredded basil
Preparation

For the dressing, whisk the oil, lemon juice and garlic in small bowl and season to taste.
Combine the arugula, tomato, pine nuts, Parmesan cheese and basil in a large bowl. Drizzle with the dressing and toss gently to combine. Serve.
