3 None large eggs, separated
1 cup granulated sugar
2 1/2 tbsp butter, melted
1 cup milk
2 tsp lemon zest
1/3 cup lemon juice
1/2 cup self-rising flour, sifted
Preparation

Preheat oven to 350\u00b0F. Grease a large baking dish.
Whip egg yolks and 1/2 cup sugar until thick and creamy. Stir in butter, milk, lemon zest, lemon juice and flour.
Whip egg whites to soft peaks. Gradually add remaining sugar, beating until dissolved between additions. Fold into lemon mixture in 2 batches.
Transfer to prepared dish. Place in a roasting pan and add enough hot water to come halfway up sides of dish. Bake for 50 mins, or until pudding is set and browned on top.
