Pesto Crusted Salmon With Roasted Tomatoes And Broccoli - cooking recipe

Ingredients
    4 None tomatoes, halved
    1 tbsp olive oil
    4 slices bread, crust removed, quartered
    2/3 cup green pesto
    2 tsp lemon zest
    4 None skinless salmon fillets
    1 lb broccolini
Preparation
    Preheat oven to 400\u00b0F. Line 2 baking trays with parchment paper. Place tomato halves, cut-side up, on 1 tray. Drizzle with oil and season to taste. Roast for 15 mins, or until tomatoes start to collapse.
    Meanwhile, place bread in a food processor and pulse to fine breadcrumbs. Transfer to a small bowl and mix with pesto and lemon zest. Evenly coat top of each salmon fillet with breadcrumbs then transfer to remaining baking tray. Bake for 8-10 mins, until salmon is just cooked through.
    Meanwhile, cook broccolini in boiling salted water until tender. Drain. Serve with salmon and tomatoes.
