Broiled Duck Breast - cooking recipe

Ingredients
    4 None duck breasts, skin and fat on
    2 tbsp olive oil
    None None Roasted potatoes or fries and peas or beans, to serve
Preparation
    Preheat the broiler to high. Rub the duck breasts with olive oil and lightly season them with salt and black pepper. Broil the underside of the breast first -for 15 mins-some pink juices should still be flowing.
    Turn the duck and cook for 5 mins, or until -the fat turns brown and crisp and runs down into the breast meat, keeping it moist and tender.
    Serve with roasted potatoes or fries and peas or beans tossed in butter.
