Meatballs In Tomato Sauce - cooking recipe

Ingredients
    1 tbsp olive oil
    4 cloves garlic, crushed
    1 (24 oz jar) tomato sauce
    1 (14 oz can) diced tomatoes
    1 sprig basil leaves, chopped
    None None steamed rice and parmesan, to serve
    None None Meatballs
    1 lb ground beef
    1 None onion, finely chopped
    2/3 cup fresh breadcrumbs
    2 large eggs, lightly beaten
    2 tbsp chopped parsley
Preparation
    Heat oil in a large saucepan on medium. Saute garlic for 1 minute, until softened. Add tomato sauce and tomatoes. Bring to boil. Simmer on low heat for 30 minutes. Cool slightly and season to taste. Use a blender or a hand mixer to puree until smooth.
    To make the meatballs, combine the ground beef, onion, breadcrumbs, eggs and parsley in a bowl. Season.
    Roll tablespoons of meat mixture into balls. Heat oil in a large frying pan. Cook meatballs in batches for 3-5 minutes, turning, until browned. Set aside.
    Return sauce to frying pan and heat on medium. Add meatballs and simmer on medium for 10 minutes, until cooked through. Stir in basil. Serve with steamed rice and top with shaved parmesan.
