Open Faced Pork And Leek Sandwich - cooking recipe

Ingredients
    2 tbsp oil
    1 (5 oz) boneless pork chop, pounded thin
    1 clove garlic, minced
    1/2 None red apple, cored, cut into rings
    2 None baby leeks, sliced lengthwise
    1 tbsp mayonnaise
    1-2 tsp whole-grain mustard
    1 slice crusty bread, toasted
Preparation
    Heat 1 tbsp oil in a frying pan. Saute pork for 2-3 mins per side. Set aside. Add remaining oil and cook garlic, apples and leeks for 5 mins, until tender. Return pork to pan and cook for 1-2 mins.
    Mix together mayonnaise and mustard. Spread over toast. Layer pork, apples and leeks on top. Serve.
