Chicken Nachos - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 small onion, finely chopped
    14 oz ground chicken
    1 pkg (1 oz) taco seasoning mix
    1 can (14 oz) diced tomatoes
    1 can (15 oz) pink beans, drained and rinsed
    1 pkg (8 oz) corn or tortilla chips
    3/4 cup grated Cheddar cheese
    1/2 cup sour cream
    2 tbsp coarsely chopped cilantro
Preparation
    Preheat the oven to 400\u00b0F. Heat the oil in a large skillet on medium heat. Add the onion and cook, stirring, for 5 mins or until soft. Add the ground chicken and cook, stirring to break up the lumps, for 3-4 mins or until just cooked. Add the seasoning mix and cook, stirring for 1 min or until fragrant.
    Add the tomato and 1/2 cup water and bring to a boil. Reduce the heat to low; simmer, uncovered for 10 mins. Add the beans and cook, stirring, for 5 mins or until the mixture thickens. Remove from the heat.
    Preheat the broiler to high. Divide the chips among 4 ovenproof bowls. Top with the chicken mixture, then the cheese. Place on a baking pan under the broiler and cook for 2-3 mins or until the mixture is golden brown and the cheese melts. Top with sour cream and cilantro and serve at once.
