Green Apple, Blue Cheese, Cranberry And Pistachio Salad - cooking recipe

3.5 oz baby salad greens
1 None Granny Smith apple, halved, cored, cut into thin wedges
1/4 cup pistachios, toasted, cut into slivers
2.5 oz soft blue cheese, such as Castello, crumbled
1/3 cup dried cranberries
None None FOR THE ORANGE DRESSING
2 tbsp orange juice
1 tbsp olive oil
1 tbsp red wine vinegar
1 tsp wholegrain mustard
1 clove garlic, minced
Preparation

Distribute salad greens and apple wedges between 4 serving plates. Sprinkle with pistachios, blue cheese and cranberries.
To make the orange dressing, whisk together orange juice, olive oil, vinegar, mustard and garlic until combined. Drizzle over salad and toss to combine. Serve immediately.
