Savory Ground Beef - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None onion, chopped
    2 cloves garlic, crushed
    1 lb ground beef
    4 oz button mushrooms, sliced
    1 None carrot, diced
    1 None stalk celery, trimmed and diced
    1 can (14 oz) diced tomatoes
    1/2 cup water, stock or red wine
    1 tbsp tomato paste
    1 tbsp chopped parsley, plus additional, to serve
    1 None long baguette, cut into 4, halved and toasted
    None None Mixed greens, to serve
Preparation
    Heat the oil in a large skillet on medium heat. Saute onion and garlic for 2-3 mins until the onion is tender.
    Add ground beef to the onion mixture and cook for 4-5 mins until well browned, breaking up with a spoon as it cooks.
    Stir in mushrooms, carrot and celery, mixing well. Cook, stirring, for 5 mins.
    Add tomatoes, water and tomato paste. Season to taste, then bring to a boil. Reduce heat to low; simmer for 10 mins or until vegetables are tender. Stir in parsley. Serve on toast, sprinkled with additional parsley. Accompany with mixed greens.
