Pan Fried Potatoes With Mozzarella And Thyme - cooking recipe

Ingredients
    3 tbsp olive oil
    12 oz new potatoes, sliced
    3 None plum tomatoes, each cut into 6 wedges
    4.5 oz mozzarella cheese, cubed
    1 tsp paprika
    2-3 sprigs fresh thyme
Preparation
    Heat olive oil in a large frying pan. Add potatoes and cook over medium-high heat for 10-12 mins, until golden brown. Set aside.
    Add tomatoes to pan and cook for 2 mins, until slightly softened. Return potatoes to pan along with remaining ingredients. Season. Cook for 2-3 mins, until cheese begins to melt.
    Serve immediately.
