Ingredients

2 tbsp olive oil
1 None onion, peeled and finely chopped
1 clove garlic, peeled and minced
1/3 lb baby leaf spinach
1 pinch grated nutmeg
1 - 14 inch flatbread
1/2 cup pasta or pizza sauce
1/2 lb mixed red and yellow cherry tomatoes, halved
1/3 lb Cheddar cheese, grated
Preparation

Preheat oven to 425\u00b0F. Line a baking sheet with parchment paper. Heat oil in a frying pan and saute onion and garlic until translucent. Add spinach and 2 tbsp water and cook until spinach is wilted. Season and add a pinch of nutmeg.
Place flatbread on prepared pan and spread with ketchup. Top with tomatoes and spinach and sprinkle with cheese. Bake for 7 mins, or until golden.
