Pumpkin And Potato Soup - cooking recipe

Ingredients
    2 1/4 lbs pumpkin, peeled, seeded and diced
    1 1/4 lbs potatoes, peeled and cut into small pieces
    1 None onion, peeled and finely chopped
    2 tbsp butter, melted
    4 1/4 cups vegetable stock
    1 None bay leaf
    1 tbsp lemon juice
    1/2 cup heavy cream
    3 tbsp dried pumpkin seeds
Preparation
    Saute the pumpkin, potatoes and onion in hot butter in a saucepan. Pour in the stock, add the bay leaf, and bring to a boil. Add the lemon juice and season to taste. Simmer over medium heat for about 25 mins.
    Remove the bay leaf, puree the soup, and stir in the cream. If you like, serve the soup in the hollowed out and carved pumpkin, sprinkled with the pumpkin seeds.
