Carrot Muffins With Caramelized Onion And Feta - cooking recipe

2 1/2 tbsp butter
2 None red onions, sliced
2 tbsp balsamic vinegar
1 tbsp brown sugar
2 1/3 cups self-rising flour
1/4 lb carrots, grated
1/3 lb feta, crumbled
1 None large egg, at room temperature
1 cup milk
1/4 cup vegetable or olive oil
Preparation

Preheat oven to 350\u00b0F. Grease a muffin pan with 6 deep cups with 1/2 tbsp melted butter.
For the caramelized onion, heat remaining butter in a frying pan over moderate heat until melted. Add onion and cook, stirring, for 10 mins or until onion is golden and soft. Add vinegar and sugar and cook and stir for 5 mins or until thick and sticky. Cool.
For the batter, sift flour into a bowl. Stir in carrot and feta. Whisk egg, milk and oil in a bowl. Gently fold into flour mixture until just combined. Pour into prepared pan and top with the caramelized onion. Bake for 30 mins or until a skewer comes out clean. Cool for 5 mins, then transfer to a wire rack. Serve warm or at room temperature.
